Welcome \ Travel \ Thai Cuisine

 



Gaeng Aom
Ingredients:
For 2 servings
300 g. (10 1/2 oz.) fillet freshwater fish, sliced
2 tbs. instant red curry paste
2 cups coconut milk
4 dried chillies
10 sweet basil leaves
4 slices galangal
4-5 kaffir lime leaves
1 tsp. lemongrass, finely chopped
2 tsp. fish sauce
1 tsp. sugar
 
Preparation:

1. In a pot, bring 1 cup of the coconut milk to a boil. Add instant red curry paste. Stir-fry for a few minutes. Add freshwater fish and stir-fry.
2. Add the rest of the coconut milk, dried chillies, sweet basil leaves, galangal, kaffir lime leaves, and lemongrass. Simmer until cooked.
3. Season with fish sauce and sugar. Remove from heat.
4. When serving, top with dried chillies or fresh chillies.

Note : Sometimes, bitter gourd is added to the dish.
