Welcome \ Travel \ Thai Cuisine

 



Gaeng Jued Ma-ra
Ingredients:
For 2 servings
1 Chinese bitter gourd
150g. (5 1/2 oz.) minced pork
1 egg
2 coriander roots
1 tbs. garlic, finely chopped
1/2 tsp. peppercorns
2 tbs. white soya sauce
2 cups

pork stock
coriander leaves and peppercorns for garnishing.

 

Preparation:

1. Cut Chinese bitter gourd into 5 cm. (2-inch) pieces. Take out the seeds.
2. Using a mortar, pound the coriander roots, garlic and peppercorns together. Mix with the pork and egg white.
3. Stuff the Chinese bitter gourd with the pork mixture.
4. Boil the pork stock. Put in the stuffed bitter gourd. Season with white soya sauce. Simmer over low heat until pork is done.
5. When serving, put 2 stuffed bitter gourds in a serving dish and pour the pork soup over them. Garnish with coriander leaves and peppercorns.

Note : To reduce bitter taste, soak the bitter gourd in salt water overnight. (For each cup of water, use 1 teaspoon of salt.)
