Preparation:
1.
Rinse chicken well and drain. Cut off the
head and feet. Place the chicken in a pot
or a pressure-cooker and pour in water to
cover the chicken.
2. Add ginger, salt, white soya sauce, peppercorns
and 3 stalks of spring onion to the soup.
Cook the chicken until it becomes tender.
Adjust the seasoning to taste.
3. Rinse the mushrooms well. Put into the
pot and bring to a boil.
4. To serve, sprinkle with whole black peppercorns.
Note
: Good dried mushroom usually comes from
China.
