Jaew Hon
Ingredients:
For 2 servings
200 g. (7 oz.) beef, thinly sliced
200 g. (7 oz.) beef entrails, cut into pieces (optional)
50 g. (2 oz.) vermicelli, soaked in water until soft
5 cups beef stock
1 egg
1/2 cup morning glory, cut into 2 inch (5 cm.) long pieces
15 sweet basil leaves
1/4 cabbage
3 small tomatoes
1 stalk lemongrass, cut into 1 inch (2.5 cm.) long pieces
3 slices galangal, grilled
5 kaffir lime leaves
1 tbs. fish sauce

Preparation:

1. In a large pot, heat the beef stock. Then, add lemongrass, galangal, kaffir lime leaves and fish sauce. Bring to a boil.
2. When serving, arrange all the ingredients in a serving plate. For the soup, serve in a sukiyaki pot or a stew pot on a portable stove to keep the soup boiling constantly.
3. To eat, pick any disired ingredients and put them into the boiling soup. Then, remove to individual's dish when cooked. Accompanied with Nam Jim Jaew (Northeastern-style Spicy Sauce)

Note : This dish is also called "Northeastern-style Sukiyaki", since the serving style is similar to the Japanese sukiyaki. However, the differences lie in the northeastern-style soup and the sauce.
