  Ingredients:
  For 2 servings
  500 g. (1 lb.) beef
  2 cup coconut milk
3 potatoes, peeled and cut into bite-size pieces
  1 onion, cut into quarters
2 tbs. instant massaman curry paste
  2 tbs. fish sauce
  2 tsp. sugar
  1/4 cup roasted peanuts
  1/4 cup vegetable oil

Preparation:

1. In a pot, heat the oil over moderate heat. Fry the beef until brown. Add coconut milk. Bring to a boil. Cover with a lid and simmer over low heat for approximately 1 hour.
2. Take about 1/4 cup of coconut milk from the beef pot and add to a frying pan. Add the instant massaman curry paste and fry for a few seconds. Remove.
3. In the beef pot, add the curry paste (from step 2), fish sauce, sugar, potatoes, onion and peanuts. Simmer over low heat for another 20-30 minutes.
