Preparation:
1.
Clean the prawns and remove the back vein.
Slit the prawn lengthwise without cutting
in half. Boil until just cooked and set
aside.
2. Mix lemongrass, lime juice, chillies,
fish sauce, shallot, kaffir lime leaves
and mint leaves together in a small bowl.
This creates the spicy dressing.
3. Pour the spicy dressing over the prawns.
4. Garnish with mint leaves.
Note
: Typically, Thai people use semi-cooked
prawns for this particular dish.
