Sang Khaya Fak Thong
Ingredients:
For 4 servings
1 medium pumpkin
1 cup coconut milk
3/4 cup palm sugar
4 eggs
3/4 cup white sugar

Preparation:

1. Cut the top of the pumpkin open. Do not cut too deep and save the top of the pumpkin. Then, scoop out the insides of the pumpkin.
2. Beat the eggs and mix with palm and white sugar in a mixing bowl. Stir until the sugar dissolves.
3. Add coconut milk and keep stirring until all ingredients are blended well.
4. Pour the mixture into the pumpkin leaving about half an inch to the top.
5. Place the pumpkin on a rack in the steamer. Include the top of the pumpkin in the steamer but do not cover the open pumpkin. Steam for approximately 30-45 minutes.
6. When serving, cut into quarters.

Note : Pumkin can be substituted with a whole young coconut.
