Tom Krueng Nai
Ingredients:
For 4 servings
350 g.
(12 1/2 oz.)
beef entrails, cleaned well and cut into bite size pieces
1 tbs. lemongrass, pounded and cut into strips
3 slices galangal, pounded and cut into thin slices
4 kaffir lime leaves
1 tbs. sawtooth coriander
3-4 fresh chillies
1 tbs. fish sauce
1 tbs. lime juice
2 1/2 cups water or broth
 

Preparation:

1. In a pot, boil water or broth. Then, add beef entrails.
2. Add lemongrass, galangal, kaffir lime leaves, and sawtooth corianders. Stir well, and leave until the beef entrails are cooked.
3. Season with fish sauce, fresh chillies, and lime juice.

Note : Beef entrails can be substituted with any kind of meat.
